This is one of those super nostalgic recipes for me. Growing up this was always in my school lunch boxes & though there are a lot of similar slice recipes out there I've never found a recipe that has the same crunch that this slice has. It's super simple to make & always seems to be a big hit. And I thankfully nearly always have all the ingredients on hand to whip this up if I need a snack in a hurry.
Chocolate Crunch Slice
Ingredients
Base
1 Cup of Self raising flour
1 Cup of Desiccated Coconut
125 grams of Butter (Melted)
1 Cup of Sugar
2 Tbsp Cocoa Powder
Icing
2 Cups of Icing Sugar
1 Tbsp of Butter (at room temperature)
1 Tbsp of Cocoa Powder
1 Tbsp of Milk
Spinkles to decorate
Method
1. Preheat oven to 190C.
2. Grease & line the bottom and sides of a 20cm by 30cm slice tray with baking paper.
2. In a large bowl add the Self Raising Flour, Coconut, Sugar & Cocoa. Mix well with a whisk to break up any lumps.
3. Add the melted butter & stir to combine.
4. Press down into the prepared slice tray & flatten well with the back of a spoon. Bake for 12 to 15 minutes.
5. Allow to cool
6. To prepare the icing, sift the Icing Sugar & Cocoa Powder into a large bowl. Add in the Butter & Milk. Stir well until smooth & free from lumps.
7. Smooth over the cooled slice base & decorate with sprinkles. Allow icing to set slightly before cutting into squares.
