Jelly Slice

Did you know in all my 30 odd years on this planet I had never made a Jelly Slice until the other day. I had eaten plenty of them over the years & always thoroughly enjoyed them at local bake sales & bring a plate type parties. But somehow when it's my turn to bring a plate it's never the first thing I think of. Usually because it does take a few hours to set & I'm nearly always under prepared & over tired in the lead up to those kind of events.

However my friends Mum is the queen of the Jelly Slice, if she is hosting a party of some kind it is guaranteed that she will make a plate of her famous Jelly Slice. She very kindly wrote the recipe down for me some years ago & it was this half forgotten piece of paper that I pulled out of the recesses of my recipe binder when I decided it was finally time to give Jelly Slice a go.


Jelly Slice

Ingredients

250 gram packet of Plain Sweet Biscuits (I used Arnott's Nice)

200 grams of Butter (melted)

2 Lemons

1 can of Condensed Milk

2 teaspoons of Gelatine

3/4 Cup of Boiled Water

1 packet of Jelly


Method

1. Grease & line the bottom and sides of a 20cm by 30cm slice tray with baking paper.

2. Crush the biscuits using a food processor & add the melted butter. Mix together well & press into your lined slice tray. Press flat with the back of a spoon.

3. Combine the condensed milk & the juice of the 2 lemons in a bowl.

4. Combine boiling water and gelatine in a small jug, stir until completely dissolved. Add to the condensed milk mixture. Pour over the biscuit base and put in the refrigerator for 1 hour or until set.

5. Meanwhile, prepare jelly according to packet instructions, using 100ml less cold water than directed. Allow to come to room temperature. Pour jelly mixture over set milk filling. Chill for a further 1 hour or until jelly is set.

6. Carefully remove the slice from the tray & slice into squares
